Mix all the ingredients except lemon juice and butter milk thoroughly. Add the lemon juice. Add butter milk little at a time stirring the mixture constantly. Add enough butter milk to get a dosa batter consistency.

there is one more thing one can do with besan--- make gattas. this is something the rajasthanis use in place of vegetables in curries, kadhis etc. try to find the recipe from authentic rajasthanis
also marathis make zunka to eat with roti and bhakri.

I have bee making dhoklas for a long time. In order to get pure dhokla flavour, its better to add ginger and green chilli paste, hing as well.
If u add eno just before steaming the mixture, you can practically get same result as u get in market.

To make dholkas really soft, add yogurt instead of butter milk and water.

I get compliments everytime i make it, and some don't believe if its homemade.
